酸甜螃蟹

这是我 最爱吃的一种螃蟹煮法,这个食谱很好吃,食谱取自小贩食谱。

crab in sweet & sour sauce (酸甜螃蟹)

500mi  oil for deep frying 炸油
1 kg     crab(cleaned and cut into pieces)螃蟹,洗净,斩块状
corn flour for coating crabs 适量粟粉,沾螃蟹用
1 tbsp  chopped garlic蒜茸
1 tsp    chopped ginger姜茸
1 tsp    chopped chilli padi小辣椒粒
1 tbsp  chopped spring onion青葱碎
1         egg,beaten蛋,打散

seasoning:
3 tbsp  tomato sauce番茄酱
2 tbsp  chilli sauce辣椒酱
2 tbsp  vinegar醋
1 tbsp  light soya sauce生抽
1 tbsp oyster sauce蚝油
2 tbsp sugar,糖
1 tsp   salt盐
100ml water水

corn flour water for thickening粟粉水打献用

Method:
1)  Coat crab with corn flour and deep fry in hot oil for 2 minutes or until cooked.Dish and drain.
     将螃蟹沾上粟粉,放入热油里炸2分钟或至熟,捞起沥干油份。
2)  Leave 2 tbsp oil in wok and saute chopped garlic, chopped chilli padi, chopped ginger and spring   onion until fragrant.留2汤匙油,爆香蒜茸,小辣椒粒,姜茸和青葱粒。
3)  Add in seasoning and bring to biol.加入调味料煮滚。
4)  Add in crabs,beaten egg and thicken with corn flour water. Dish up.倒入螃蟹和蛋汁,拌均打茨便可上桌。
